Whether for ethical reasons or personal preference, adhering to this strict diet is not for those who binge on Big Mac’s from McDonalds and chocolate bars regularly. Like many others, I assumed Vegans did not acquire the same nutrients as those who ate meat and dairy products. Not only are these alternatives easier for the body to digest, Vegan enthusiasts suggest meat and dairy substitutes contain more vitamins than drinking a glass of milk. If I can look as youthful and gorgeous as Natalie Portman, I may have to reconsider my weekly pizza binges!

Who doesn’t love cupcakes? With Valentine’s Day just around the corner, here is a Vegan friendly Red Velvet Cupcake recipe for both the hopeless romantic and those riding solo (like my Brother):
- 2 pre-cooked chopped beets (skin removed)
- 1/3 cup vegetable oil
- 2 tbsp honey
- Cake mix
- 1 8oz packet of Tofutti cream cheese
- 2oz margarine
- 1 tsp vanilla
- 2 ½ cups of confectioners’ sugar
Baking Directions: Pre-grease the cupcake tin with margarine and bake for 15 minutes at 350F. Wait for the cupcakes to cool and apply icing.
